DAIRY PRODUCE.
(To the Editor). Sir, —Some weeks ago I asked if any of our experts or factory managers couid tell us how it is that the English cheese made in the Old Country farm houses by the farmers’ wives and daughters without as a ru’e so-called expert instructors are able to beat us out of sight in prices. Is it because of climate, land, cows or storage? For myself, I think it is a great deal to clo with the old pasture. Also, is the Canadian make better than ours, as there is still a lot of difference in price. Now a Jot of us are not too much, in favour of the Control Board, but I understand that there are two companies on this coast who are not under control, but I have never heard whether they are a.nv better off. At any rate. [ do not hear of them beating the control or paying out the Bonus (so-caUed). I cannot see much harm if they did tell us how so far they have come out. It could not make us better or worse, but might help us in future. —I am, etc.,
