Tlio gas cooking stove seems to be •responsible for many minor castastrophes, possibly because it is so silent ■that pans arc apt to be forgotten until the contents boil over. There are several inventions which claim to prevent any accident of this kind, no matter how forgetful the cook may be. There are mats made of asbestos backed* with metal, which are an improvement on the ordinary asbestos mat, which did not turn out so reliable with boiling pans as was anticipated. These mats are said to prevent food of any kind from burning or boiling over, and should be a iy;eful addition to the kitchen. Another idea, which has been patented, is an aluminium milk pan so constructed that over-boiling is impossible. Although intended for scalding milk, it can, of course, be used for sauces or anything else. This pan is made in three sizes, and costs from about four to six shillings. Clever inventions of this kind are very useful, but cooking cannot be successful unless pans are watched during the process.
