NEW ZEALAND STILTON.
GREAT AMERICAN TRIBUTE. ► i PRAISE FROM CHEESE CONNOISSEURS. One of the principals of a .wellknown Wellington firm made a trip to the United States and Canada recently, and on the voyage became on very friendly terms with a professor of the University of Kansas, Lawrence, who had just completed a brief visit to the Dominion. On Tuesday, says the Times, the gentleman in question received a letter from the professor recalling pleasant incidents of the voyage, and' enclosing some snaps of Salt Lake City, Tahiti, and other places. One portion of the letter particularly refers to the New Zealand dairy industry, and will best speak for itself. It says: “First I must tell you about my cheese. It was a stupendous success. As I told you, it was a New Zealand Stilton, made by Saxelbv’s registered agents J. E. Watson, and •Co., Invercargill, New Zealand, and purchased in the Farmers’ Co-opera-tive shop across from the Midland Hotel at Wellington. THE INQUEST.
“Four weeks ago when the weather had turned cool I called in a: dozen friends, cheese connoisseurs, and carved the cheese. I am not jesting when I said the cheese was a great success. It was in perfect condition after the long voyage, and many of the guests declared that, it was the equal of Gorgonzola or Roquefort. After reading all this you will be more than ever convinced that we Americans take our food, seriously. But I cau assure you on the other hand. that there are many benighted Americans who cannot tell one cheese from another. “We are so keen about the .New Zealand Stilton that we are wondering 'whether we cannot get some of it imported into the States so that we can buy it in future. What do you know about that? THE VERDICT.
“I not only had the cheese party, but gave segments of the cheese to eight other friends, and: now, after four weeks, we are still enjoying the last vestiges of that noble fourteen pounder. That’s enough about cheese. “But the rest of your country, is just as fine, and I have been enjoying my browsing into the copy of ‘Progressive Now Zealand,’ which you gave mo on the steamer. It makes me want to come hack to New Zealand, which I hope to do, because of the many things I missed during mv hurried trip.”
