When Buying Fish.—See that the fish is firm. The eyes must be bright and not sunken at ail. The gills must be red. Medium-sized fish are best, being neither coarse nor bony. Shell fish should be heavy for its size, and, when opend, not watery. When Buying Meat.—lt ishould be firm and elastic to the touch, and the grain ishould be fine. It ishould be moist, not wet or clammy. Beef should have yellowish fat, but the fat of all other meats should be white. When Buying Vegetables.—They should be firm, and dry. Greens should be quite crisp. Roots should be stiff and break, noib bend. When Buying Groceries. —Buy in large quantities iif at all possible, als it is cheaper. Candles and soap improve with keeping. Oatmeal does not keep too long and coffee quickly loses its strength. It should always be kept in aii. air-tight tin. Taste cheese to make sure the flavour is good. Avoid.tinned goods with bulging sides. General Hints. —Avoid food! not in season, the flavour is .poor and nt is expensive. Do your own marketing,' conuparing prices and goods on the way. Notice the weighing and check the addition before paying.
