HAMS: AND BACON. A very fine display is made by the enterprising firm of T. H. Walker and Son, of Tawhiti, Hawera, proprietors
of Egmont brand, mild euro, hams and bacou; ; The factory has been established on the present site for seventeen years, but four years since the present firm bought out their partner. During those four years the business has expanded rapidly, until now it has more than trebled in volume of' output. The works have been added to from time to -time, and new machinery and plant installed,.until now they have the most modern . and up-to-date methods in 'every.’department. Of these two of the latest are •'a and a hog clcliairer. ; The action of the singer is that every vestige of hair is removed and the skin made much more easy in use. The works now have a. handling capacity. of. a. hundred pigs per hour, and the dchairer even more. Supplies are drawn from all sources, and recently the.firm.have had-to draw a large number front flic Waikato, where they get. a very good class of pig. la regard to the taste of consumers, it is interesting to note, Mr Walker
says, the Now Zealander sticks to . the short sides, while the Australian prefers -the' long-sides, with.-.a-, weight of qornu oo; ysaipi ‘ sc llOS °1 fat. The display is just .alongside the tea room and next the main hall. Representatives will be in attendance everyday, and! they will be pleased to receive orders and to give all information- required.
