RATIO AND YIELD OF CHEESE.
(To the Editor). Sir. —In your issue of last evening there appeared a 'etter that purported to he a reply to mine of April Ist. Kindly permit me space to say that, though 1 welcome fair criticism, it must be open, and that I must positively refuse to replv to any anonymous correspondence on this subject. My reasons are that 1 am neither ashamed of my personality, nor my arguments, and that I have no time to waste upon correspondents of the type of “Equitas,” who, poor silly “coon,” if lie' on ,v knew more, would write less. He says he is afraid of his reason. I don't wonder at it, and therefore I will be merciful unto him and not place any further tax upon it for him. Perhaps, however, some kind iri-end of his, with a hand less rough than mine, wou’d like to deal very gently with him, poor chap, and let him down much lighter than I might.—l am, etc.,
