WAVS WITH STALE BREAD.

Bread Soup. Two quarts of stock, six ounces of bread crusts, four tablespoons of grated cheese, half a nutmeg grated, two eggs. Boil stock, add bread, cut into tiny pieces, break eggs into tureen, beat well add cheese and nutmeg; add soup gradually, stirring all the time, season with salt and pepper to taste. Fritters. Half a pound of bread, three ounces of sugar, quarter pound of sultanas, one egg, half a pint of milk, grated lemon rind, and nutmeg to taste. Boil milk, pour over bread,, cover, and stand ten minutes; heat with fork, add other ingredients and fry a golden brown in boiling fat, drain, and strew with castor sugar. Fish and Tomato Pie. Breadcrumbs, cold fish, lour sliced tomatoes, seasoning, half a cup of milk. Method.—-Butter deep pie dish,' bottom and sides, sprinkle thickly with Inver of breadcrumbs, next layer or cold fish sherd into small pieces, next layer sliced tomatoes. Fill dish with alternate layers, breadcrumbs for two layer; season with salt and pepper, po; r over the whole half a cup of milk, and pla.c small pieces of butter (or on top; bake in good oven for about 15 minutes. This recipe may be varied with scraps of minced meat, cold ham or bacon. Apple and Breadcrumbs. Bread crumbs, stewed apples. Method: Well butter pie dish, cover thickly with breadcrumbs, fill up with stewed apples, and cover with breadcrumbs ; place small pieces of butter on top and bake for about 15 minutes. Cheese Mystery. Ingredients.—Stale Bread, cheese, one onion, sage. Pepper, and salt to taste, small piece of margarine. Method.—Soak bread and squeeze drv Chop cheese and onion and sage small, and well mix. Urease pie dish with margarine and put pieces over top. We]l bake and serve makes a cheap and tasty supper dish.
