FIE ST 10,000 COPIES GRATIS. To please the palate is the universal aim of the the coolr, from the newest newly-wed to the most experienced mait-re chef. Food without flavour is unthinkable, yet hundreds of dishes have an added appeal if a good culinary essence is .'judiciously used.

How to improve dishes you know, and how to make numerous dainties vou do not yet know, with the aid of Stevens’ “Cathedral” Brand Essences are told in a new cookery book just to hand.

“Flavour iu Cooking” -then might well be the title of this 48-page Cookery‘Book compiled by Miss Mildred Trent, M.C.A., New Zealand’s Leading Cookery Expert. While the object of this splendidly produced and profusely illustrated book is admittedly to show how Stevens’ “Cathedral” Brand Essences may be used to advantage, it is unquestionably a book of great value to she who would impart variety and distinctiveness to her cooking. Miss Trent’s authorship amply guarantees every recipe given. Her many qualifications won overseas, added to her high reputation won in New Zealand. make enlargement upon her culinary prowess unnecessary. Many are the delightful suggestions contained in the book under review for the festivities approaching. Cakes of every conceivable kind, delightful yet inexpensively made confections, ice cream, page after page of puddings (hot and cold). The recipes are all given together with explicit directions in large clear type. The publishers advise that the first 10,000 copies of this “Cathedral” Brand Essences Cookery Book will be supplied free. They ask that 4d in stamps should accompany each request in order to cover postages, wrapping, etc. H. F. Stevens, Christchurch, is sufficient address.*
