Mr Robert Joyce, who has been enquiring why New Zealand butter is higher priced on the London market than . Queensland butter, asserts that this is primarily due to habit. There is little difference in the actual value of the best Queensland and New Zealand butters. One detrimental characteristic of Australian butter is its extremely solid texture, niaking spreading difficult, and it is thus not acceptable for the restaurant or domestic trade but it is acceptable to blenders. Further, as Queensland butter is available on the British market only six months of the year, it is therefore useless for any British house to specialise in it, while New Zealand butter is available longer.—Sydney Sun Cables.
