SYDNEY, May 18.

The first Australian Congress of Refrigeration and Dairying, which is being held at Sydney, has heard all phaises of refrigeration discussed by leading authorities here and abroad Nearly a score of papers were cad on cognate subjects. Of the New Zealanders, A. S. Mitchell read a paper “Insui-ition of Refrigerated Premises,” Dr. W. J. Wiley “Some Factors Affecting the Keeping Quality of Butter in Cold Storage,” F. W. Grainger (president of the New Zealand Association of Refrigeration) “The Influence of Mechanical Refrigeration on the Dairy Industry in New Zealand,” Dr. F. H. McDowall, “Neutralisation of Cream for Buttermaking,” and I. R. Sherwood, “The Role of Lactic Acid Bacteria in Cheese Ripening.” Mr W. Taylor, New Zealand Commissioner in Australia, was among the speakers at the formal opening of Congress.; i
