After an absence of three years he found a very great improvement in the make of Southland cheese. From a factory point of view, he di.cl not think there could be much improvement. It ; must be looked for in the direction of a hetter ,'milk supply. In regard to dairy inspection they were not much further ahead than six years ago. That branch was under his control.,- It had been suggested that cows should be taxed for inspection , tlie Department paying a3 much as would make up the salar- • ie? of inspectors, but much would depend on the qualifications of men appointed to factories. In the South, thejr should be better equipped for curing cheese. He urged the necessity for &n experimental station with a library. Fewer cows and bstter ones had proved a marvellous success in Denmark, and- should bo tried here.:' Cows came into profit too poor to do good. Regarding the sale of produce in Britain, every effort should be- made to sell through the same channels every year! to the same consumers. .;
