By tho Coffee patent still, however, whisky can bo made from any sugar-producing product, such as Indian corn, molasses, rice, potatoes, etc., and tho distillation of such spirits, which are devoid of all the essential characteristics of whisky, has developed to such an extent in recent years that IT IIS DIFFICULT IF NOT IMPOSSIBLE NOWADAYS TO OBTAIN IN THE ORDINARY PUBLIC-HOUSE A GLASS OF GENUINE WHISKY. Wo never hear of English whisky, and yet in England alone a few yours back over 7,000,000 gallons of this raw spirit was distilled from such products as I havo mentioned, and this quantity is now considerably increased. Our “Special Scotch” has in many eases censed to bo Scotch, and has its origin probably by the Thames or Mersey rather than by the Spey or the Findhorn. But assuredly it would be sufficient, to causo the Highlander to turn in his grave that liis beloved [ “Scotch” lias not even been sacred from German imitation. Yet such is the case, and “made in Germany” would appropriately apply to a great deal of the “whisky” sold to-day in the modern public-house, under showy labels, as 6ome grand Highland liqueur. Indeed, some time ago, passing a well-known Loudon hostelry, I saw what I could not- fail to recognise—two largo casks of this German spirit, which is chioily made from potatoes, being lowered into the publican’s cellar. And this “Fine Old Scotch,” as I have nodoubt it evontually became, can be purchased at from 5d to lid a gallon, at about tho same price—list, ye British workmen —that you pay for your paraffin oil. 1 have not tho figures for tho past year, but a few year's back 8,199,470 gallons of this German spirit were imported into this country (mainly from Hamburg), of which 1,732,571 gallons were admittedly used for drinking.

But we cannot throw stones at Germany in this matter. Indeed, it is only fair to su.v that, though Germany is credited with its manufacture, a great deal of what has heroine generically known as German spirit is produced in Russia and sent to Hamburg for exportation. The blending of this vile spirit is carried on even in the bonded warehouses of this country under the eyes of the revenue officials, or, as Mr. Healy, in his characteristic fashion, once observed, “under tli 0 nose of the lion and unicorn.” Very often not moro than one cask of real S

Scotch or Irish goes to make up the blend, the rest, in any proportion that the blonder likes, thirty, forty, or fifty casks, being composed of this fiery stuff.
