The quotation covers both white and coloured cheese, tho difference « between the two sorts is merely in appearance, but in marketing there is sharp cleavage. Avonmouth, for instance, will not look at any cheeso hut white-, whereas the / district supplied by tho Glasgow market has a clear preference for coloured.
