LONGBUKN FREEZING WORKS. TO THE EDITOR OF THE STAR. Sir, — In consequence of a special request I hand you, for publication in your paper, the copy of a letter received by me from the Secretary of the Long-burn Freezing Works. Neither the Gear Meat Preserving and Freezing Company nor the Wellington Meat Export Company boil down old ewes on owner's account, consequently were it not for our local Works we should have no outlet for our cull ewes. For one lot of cull fat ewes, boiled down for me by the Longburn Freezing Company, I have netted 6s 8d per head, and received the money for the same. I am, etc., Geobge Wilks, Clare Lea Farm, Feilding The Longburn Slaughtering and Freezing Company, Ltd. Longburn, N.Z., February 13th, 1895. George Wilks, Esq., Clare Lea, Feilding. Dear Sir, — I have to acknowledge receipt of your favor of the 11th instant, respecting the ewes boiled down on your account. The principle on which we work the boiling-down is this. If the sheep are really good boilers we will freeze the legs, if desired, for clients, deliver and sell same in London for 2d per lb, boil down the carcases, find casks, and deliver tallow on trucks at Longbum for 4s 6d per cwt. If clients desire to sell the legs locally we secure for them the best price we can, viz., from 8d down to 6d for indifferent legs, shoulders same prices, according to weight and quality. Eemember, we sell the legs for clients, we make nothing out of the sale, and we do not interfere with the butchers who buy them as to the price they may sell them at. If desired by clients we buy the tallow, giving 14s per cwt., or will ship it on their own account. At the opening of the season we were giving 16s per cwt. for tallow, but present prices do not warrant our giving more more than 13s. Skins. — Our method of dealing with them is, wefelhnonger each client's separately and weigh the wool, afterwards paying according to the quantity of wool got from the skins. If clients desire, we will fellmonger their skins on their own account, and put wool on to the Railway trucks here, for which we charge l£d per lb. You will see by the foregoing that we are prepared to deal in which ever way clients desire respecting their fat ewes. With cull ewes, we take off any legs and shoulders which are fit for food and sell on behalf of our clients, boil down and deal with the tallow and skins same as before described.
