Germans were pleased to learn recently that from August 1 their bread, rolls, and cates were to be whiter and more tasty than hitherto., ' From that date the bakers throughout the Reich were authorised to abandon, the potato flour which they have hitherto been forced to mix with their white flour in a proportion of 4 per cent, and to substitute for it 10 per cent, of special light rye flour, which, ' it is stated, mixes perfectly with wheat flour and in no way spoils its taste. Rye bread, which is if anything more eaten in Germany than white bread, will in future, • however, contain 3 per ,cont. of potato flour.
