UPSIDE-DOWN CAKE FOR SWEETS COURSE 2oz butter. 6oa sugar. 1 egg (well beaten). Half-teaspoon vanilla. 6oz flour. 2 teaspoons baking powder. Half-oup milk. I-lioz butter. Half-cup light brown sugar. Pineapple, 5 slices (if desired). Method.—Cream the butter and add the sugar gradually. Then add the egg (well beaten) and the vanilla. Sift in' the flour, add baking powder. Mix with the milk. Pour the mixture into tins prepared as follows :—Cream the butter with the light brown sugar, and spread this over the pan. - If pineapple is desired _ place the slices on top of the mixture. Set cherries in centre. Dried fruits such as prunes and apricots which have been soaked for 48 hours, and drained thoroughly, may be used in place of pineapple. Pour batter - over fruit, and bake at 350 F. for 40-50 minutes. Turn out, upside down, on to serving dish; serve hot with hard sauce or cream.
