PECHE MELBA IN BRONZE. Our neighbours across the Channel have a much more lively and catholic imagination than we have in the matter of public memorials. Outside the ranks of royal personages, once prominent politicians, famous soldiers and sailors, and perhaps an engineer or two, i can recall in all London only a handful of statues to celebrities. There is the Shakespeare effigy in Leicester Square, one to Dr Johnson in a Strand churchyard, one to W. S. Gilbert —or is it Sullivan?-—on the Embankment, and one to Mr Raikes, who invented Sunday schools. We have the Peter Pan statue, of course, but where is Falstafi, or John Silver, or Old Forsyte, or even Mr Sherlock Holmes? France some time ago put up, in Foch’s native Tarbes, a fine statue to D’Artagnan, and now, in his native Yilleneuve-Loubet they are erecting one to the great M. Escoffier, the Napoleon of chefs. He will be sculptured seated, in the very act of gourmetic inspiration, and round the base of the memorial will be carved the dishes he invented, amongst them his immortal Peche Melba.
