BLUE POTATOES

GROWN BY EARLS Blue potatoes, which have recently come into prominence as a delicacy, have been cultivated by the Earls of Malmesbury for more than 100 years at Heron Court, the family scat in Hampshire. ‘‘When I read about the new blue potatoes in the ‘Sunday Despatch’,” the present Earl stated recently, “I thought it would be of general intei'est to give some account of the kind which has been grown by my family for foiix generations at least. “There is considerable mystery about their origin. They were probably introduced either hy my greatgrandfather or my great-uncle, who succeeded him in 1841. As the family was closely associated with France, it is possible that they came from there. 1 think they could be grown almost anywhere “The Victorian ladies were inclined to at the blue potatoes as being unnatural, but personally I have always liked them.” A sample o f the potatoes from Heron Court, cooked in the ordinary way, proved to lie more delicate, in flavour than the white variety'. The blue colour survives tho cooking process, ami makej the dish look most attractive.
