So keen has the competition become that many packers, to reduce cost, buy fish caught out of season or fish that has gone slightly off through being kept too long before being preserved. The reader may remember the rancid flavor of some Sardines which upset him, and may be interested to know that this was due to the fact that Cotton Seed Oil has been used for packing the fish in. Unfortunately storekeepers ail the world over, in trying to go one better than their competitors, are induced to buy cheap goods, and in catering for this trade many of the packers have descended to using Cotton Seed Oil in place of Olive Oil, and this toothsome delicacy has suffered in consequence. The largest packers in Scandinavia are Messrs BJELLAND AND CO., who employ 1,000 people in their sis factories, and whose-out-put for last season was ten million tins.
