The log provides tor male cooks to receive from £4, Where free oyUore. hands are employed in the kitchen, down to £1 7s fid per week;. £3 IQs to £1 7s fid where three are employed, and £2 where only one cook is engaged. Female cook* are id be paid £3 to £1 Is, £2 12s fid to £1 Is, and £1 10s tinder corresponding dreumstances. Waiters are to he paid from £2 5s to £1 10s Where more than three are employed, down to £1 12s 6d where there is only one. Waitresses under corresponding circumstances are to receive £1 13s 6d to £l 2a 6d and £1 4s respectively. Pantrymen are assessed at £ll2s fid to £l 7s 6d, and pantrymaids at £1 4| to £1 Is. Other proposed wages are: Day porters £1 10s, night porters £2, late porters £1 IQs, huttons 12s fid, clerks £2, barmen £2, baiiardmarkers £1 10s, housemaids £l 4s to £1 Is, barttraids £1 10s. In restaurants and fish and oyster saloons the wages for male cooks run from £3 to £1 7s fid in the larger establishments to £2 where only one is employed. Female cooks vary shniiacty from £2 5s to £1 10s. Waiters and waitresses’ wages are as in toe case of the hotels. The above rates are exclusive of board and lodging. Where board is not provided, an addition of 10s 6d pCr week is to be made, where lodging is not provided an addition of ss, and where neither is provided ah addition of IBs 6d. Wages arc to he pud weekly, and no employer is to keep more than twenty-four hours’ wages in hand; The horns are to be arranged as deemed practicable in each department, but are not to exceed fifty-five per week. Half a day’s holiday is to be given every Week, and seven consecutive days every twelve months. The preference clause is also demanded. In forwarding the log, the union, requested that if not satisfactory they would be prepared to meet a committee of toe employers, with a view to' arranging an industrial agreement. Failing this, it was proposed to apply to the. Arbitration Court for a settlement of toe matters in dispute. The hateOceepem did not discuss the log in detail, hut appointed a committee of six to confer with the union. It was generally considered 1 that toe scale of wages was in some instance* too high, and that' the hours proposed were not statable.
