LUSCIOUS RED CURRANTS

Hed currants are refreshing and particularly luscious just now. They're seldom served raw, but actually they are much better in their natural state than stewed to a squashy pulp.

Try washing and stalking the currants, well dredging with caster sugar, pouring over a little maraschino or sherry and leaving on ice or in a refrigerator for an hour or two. Serve on individual plates with stiffly whipped cream piped on top just before sending to table.
