Kidney Soup. 1 Cossack Dumplings and Fried Onion*.
Cabbage, Kumeras Mashed. Biscuit Pudding.
Cossack Dumplings.—The family will enjoy these: lib calf liver, 2 slices white bread (1 cup), 2 eggs, i-cup soft butter, 2 tablespoons chopped parsley, 1 dessertspoon chopped onion, £ teaspoon pepper, 2 tablespoons, flour. Put liver through the mincer. Soajt bread for 2 minutes-in water, t£«ia. squeeze water from bread. Beat/egg yolk and butter. Ada and combinfe with the liver and bread, the dhoppetlohion, parsley, salt, pepper, and flouj; Beat egg white' until stiff, and- foljl these into the other ingredients. Shapje the mixture into balls and drop theik in boiling water. When cooked,- drain and serve on dish surrounded with p border of fried onions. ) Biscuit Pudding.—J-lb broken biiK cuits, 2 cups milk, 2 eggs, 1 tablespoda des. coconut, 1 tablespoon brown sugafc,, ■|-cup sultanas, juice and rind of jllemon. | Bring milk to boiling point, adding a slice of the lemon rind to give fla^«, our. Grate the remainder of the rizfL' and* mix with the crushed or brokoa biscuits. Over this pour * the 'boilink milk, adding sugar, sultanas, and: lemon juice. When cool, add eggs/we^T beaten,, and bake in a moderate oven 1 hour. - !
