PRICE AND QUALITY OF MEAT

Sh-, Your correspondent "Butcher," in his reply to my letter, conveniently ignores the question of quality. My complaint is that consumers are paying what seems an excessive price for an inferior article. It is well known that the best meat is exported, leaving little but second-grade for local consumption. This, I suppose, is sold at disproportionately high prices. Why should the consumer have to help to pay high rent ? There are far too many middlemen in the food business, which accounts for dear meat, also dear fruit and vegetables. I, for one, shall certainly continue to deal directly with farmers and growers, and thus provide my family with the best food at reasonable rates.—l am, etc.,
