Make a length of chain fl>/2 inches long. Work I double crochet in each chain, to the end of. Ibo chain, now turn with 2 double crochet into the end of the chain and work 1 double crochet in caeli chain along the. other side of the work. Turn with 2 doublo crochet into the end of the' chain and work one round of 1 double crochet in each double crochet. This forms the base of the bag. Chpese Shortbread with Spinach.—A well-made puree of spinach, can make a- course by itself if it is served with little triangles of, shortbread made with, the addition, of .grated cheese. Cheese With.Fish.—We.all know the fashion of serving, up cold flaked fish warmed up with a cheese sauce, sprinkled 'Tvitk breadcrumbs and browned in' the oven -which, usually passes muster for fish mornay. This is a little more elaborate, but well worth the extra trouble. Fillets or cutlets of any white fish can be used, preferably sole, lemon sole, cod, or.hake. Poach the fish in a little fish-stock; that is cook it, covered, in water which, is nearly boiling .but not: quite, till it is done. Then arrange the fillets ••or cutlets in. a dish, sprinkle.them with seme finely-chopped:mushrooms, a few spoonfuls of cream and grated cheese (or cheese and fine bre'adcrumbs'inixed), and brown the whole thing as -Iquickly as possible in the oven. i
Apple Cheesecakes.—Peel and cut up the apples and. to each Coz of apple allow lioz of sugar and the rind and juice of half a lemon. Cook till soft, beat to a pulp, and add one tablespoon of cake crumbs and'loz of butter. Cool a little, add the beaten yolk of an egg, and then the frothed white folded in very lightly. Line some patty pans with/a short crust, fill with the mixture, and bake for about a "quarter of an; hour. ■ ■■•,.■ 5, "
Cheese With Eggs.—Cheese can bo used in many ways with eggs—(l) as a stuffing for cold hard-boiled -eggs when mixed with the yolks and.a little cream or butter; (2). in a sauce for masking^ hot hard-boiled' eggs; poached! eggs, or soft-boiled eggs; (3) combined with scrambled- eggs , and Ecrvcd- ; on pieces of buttered, toast on which, has been spread a very little' anchovypaste; (4) and, of -course, in an omelet. .•.,:■ . . ■
Savoury Apples.—-Take lib cooking apples, lib potatoes,'.. £lb checso, 1 medium onion. Peel the potatoes and onion and slice them thinly, arrange in layers ,iri. a. casserole dish,. season with pepper and salt, coyer with' water, and cook in a moderate oven for 1J hours. Peel and slice the apples and grato the cheese. Mix the apples 'and half the cheese . with the onion and potato, sprinkle the rest 'of '■ the cheese on the j top' and bake till the apples are tender (about half. an hoar)'and serve hot. Apple Hedgehog.—Stew 21b of apples with 31b of • sugar' in' quarter-pint of water, then add the juice of one lemon. Dissolve 2oz of gelatin© in quarter-pint of water and add it to the apples. Boil for a few minutes, pass through a sieve, and colour it with, cochineal or a green colouring. Turn into a wet mould. When cold and set, turn out and stick into it some blanched split almonds. Serve with custard or cream.
Apple Roll.—Mix ' some chopped apples with sugar,, grated.lemon rind, ground nuts, arid raisins. Roll out some short pastry thinly a?id spread it with the mixture. Form it into a roll with a layer of pastry next to the mixture, cut it into slices, and lay on a greased baking tin. Bako for about; twenty-five minutes in a rather hot oven, basting it once or twice with the! syrup which comes from.the pastry.- I
