Marrow Omelet. —Grate marrow, but not too finely. Make an egg batter (as made for pancakes), adding finelychopped parsley, salt, and pepper. Mix them well together. Have a small frying-pan ready, with smoking hot fat. Lay the batter evenly, about quarter of an inch thick and slightly lower your heat. "When brown turn the omelet, and let the other side brown in the same way. Orange Shortbread. —3 cups flour, Jib dripping (or butter, which is better), -Jib sugar, 2 tablespoons of orange juice. Cream dripping and sugar, add orange juice, mix in the flour; roll out thin and prick with fork. Bake in hot oven.
! Plain Cake.—3 cups flour, 1 cup sugar, ilb dripping, 1 egg, essence to taste. Cream sugar and dripping, add well-beaten egg, add 1 cup of milk (powdered makes it very nice); then mis in the flour. Bake in a shallow tin for -1-hour in a fairly hot oven. When cooked this cake can be cut in half. Spread some jam on one half, then join the two halves together, and put icing on top if preferred. It is a good substitute for sponge sandwich.
Stewed Eggs and Cheese.—Allow one egg for each person, and take half the weight in butter and one-third of the weight in grated cheese. Thoroughly beat the eggs, and then mix well with the cheese and butter, flavouring with pepper and salt. Cook in an earthenware pot or an enamelled saucepan until the mixture is quite thick, and pour into a deep dish before serving. A little chopped parsley may be added to this dish. Madeira Cake.—Coz flour, 4 eggs, -Itcaspoou baking-powder, 3oz butter (molted), Coz sugar, candied peel. Attond to oven; lino a cake tin with greased paper; beat eggs for 10 minutes; add sugar and beat 10 minutes louger; add molted butter; add sifted flour, baking-powder and candied peel; pom- in prepared tin and bake: in moderate oven about 40 minutes. When, cooked turn on to a sievo to cool.
