Lemon Cream.—Take 2 lemons, 1 pint of water, 2oz cornflour, 6oz white sugar, and 2 eggs. Peel'the lemons very thinly, and strain juice; mix the cornflour and juice to a cream, boil rind and water for about three minutes, add to the cornflour, stir well, and boil for five minutes. Then add sugar; allow to cool slightly, add well-beaten eggs, and stir over gentle heat until it thickens. Then pour into a wetted mould and serve with custard or cream.
