Sir —Your correspondent " Anti-Short Weight," writing in your Friday's' issue, infers that 3id per 2lb loaf is a fair price for bread. Like many another anonymous writer, he shows the greatest ignorance of the subject-matter with which he deals, aud I say any man is a coward who casts slurs at aud libels his fellow-men under a norn de iilitme. I say it's a disgrace to the Empire City that bread js selling at 3£d per 21b loaf when we consider the present price of flour. I will prove what 1 say by giving a few details. Suppose a baker bakes a ton of Hour a week, and pays £13 10s for his flour, and suppose out of that ton of Hour ho makes 1400 loaves (this is an outride estimate, and I maintain that it cannot be done, but I want to make" everything appear most favourable)—l4oo loaves at 3id, £20 Ss 4d. Now let us come to expenses :—1 ton flour, £13 10s; 1 foreman, £2 10s ;' 1 second hand, £1 10s ; 1 carter, £1 ; 1 horse \fead), 12s j rent, say £1 os; yeasl, 5s ; board (carter and second hand), £1 ; wood, 10s. Total, £22 2s. Debit, £l 13s Bil. No daylight robbery here ! Besides incidental expenses — such as repairs to trap, horse-shoeing, &c. — not to mention time spent in book-keeping, minding shop, and hunting customers for money. Besides being hampered by one of the most unjust Bread Laws that ever hampered any trade, which compels a baker to sell fancy bread the same weight as household bread. Suppose you weigh two pieces of dough, each 2lb 3oz, make one a batch loaf, and one a i'anry loaf, the batch loaf will come out full weight, and the fancy loaf will come out perhaps 3oz short, according to the amount of crust it has. Take each loaf after it is baked and soak each in water for half-au-hour and both loaves will weigh the same, showing that more moisture evaporates from the fancy loaf than from the batch. Let the bakers of Wellington charge a lair price for their bread, do away with cutting prices, aud by so doing r.iihe their trade to the position it ought to occupy among the skilled crafts of the colony.
