THE INSPECTION OF DAIRIES.
TO THE EDITOR OF THE EVENING POST. Sir— l am pleased to Bee by your subleader of tho 9th instant that a bill is about passing through Parliament providing for the thorough inspection of all dairies I would like to sea an inspection of cow-yj,rds as well, for I can asure you that some ot the yards and dairies in the district where I reside are in a ino3t filthy state. I have seen cows up to their knees in muck while being milked, while out and around the yards was a sea of liquid manure. Pig-sties, dairy, fowl-hou3e, and water-closet are all to be seen close together, and the stench from them is enough to kill dogs, leave alone human beings. I speak from experience, as I have kept a dairy for over twenty years, and I know that milk or butter is not fit for food unless the dairies and surroundings are kept thoroughly clean. As I send milk to Wellington, £ would like to see a thorough inspection of dairies and yards made. It would be better for all milk-vendors and honest dairymen, and the public at large.
