SNOAV CAKE.— Take lib. arrowroot, well crushed, £lb. butter, the white of Bix eggs, Jib. white sugar. Beat the eggs to a froth, and the butter to a cream ; mix these two together, then add the other ingredients, and beat the whole for twenty minutes. Bake for an hour or an hour and a-half in a moderate oven. — "M.D." Essence op Coffee.— Put lib. of beßt coffee into 2£ pints of cold water, let it steep twenty-four hours ; then strain, and bottle it. The essence will keep for months. Two tablespocnsful of it, added to a cup of boiling milk and sugar to taste, will be found excellent. — " Burra Conaomah." Ambkr Pudding. — Three eggs, their weight in sugar, butter, and flour ; juice of one or two lemons ; peel of one, grated. Work the butter with the hand, till like cream, then add the sugar, flour, and beaten eggs by degrees, then the lemon juice aud peel. Butter a mould thickly, and when tbe ingredients are well mixed, pour it in, taking care that the mould is quite full. Butter a piece of white paper, cover it over the top, tie it well over with a cloth, and put it into a Bancopan of fast-boiling water. Time, three hours to boil.—" &R.M."
