I Extractive master, 3-06 per cent.; Acid matter, ! o'l7 per cent. I have also examined the Ale for such deleterious ingredients as are sometimes added to Beer, and have found no indication of their presence. The three first eonoitions laid down by the Committee for Wines and Beers for the late International Exhibition, as those to which especial promineDce would be given, were—lst, Low alcoholic per centage: 2nd, Freedom from acidity; 3rd Absence of fusel oil; and all these are fulfilled in this [ sample.
