ROASTED COFFEE. (GIBSON & MITCHELL before leaving Home, for these colonies had, from peculiar circumstances, the subject of Coffee Roasting forced upon their attention, but it was not until after many fruitless endeavours they succeeded in gaining a knowledge of this (which may truly be called) SCIENCE. Roasting Coffee, which appears to the uninitia--ted to be a very simple matter, is an operation of the greatest delicacy — hence the present impossibility of procuring A Cup of Real Good Coffee. G. & M. arc glad to announce, that this desideratum is at once supplied by their PA TEN T COFFEE 11 OA 8 TER, the complicated machinery of which they have now had an opportunity of erecting in their ( new premises. — There are certain principles which must be attended to in roasting coffee — | if the heat be too slowly or too quickly applied, in either case the delightful * AROMA OF THE BEAN is dissipated, and consequently the fine flavour of the coffee lost, — and even should the heat be duly regulated, unless tne bean is EQUABLY ROASTED, no better result will follow — as in this case it will merely be an over and underdone heterogeneous mixture. — The Patent Coffee Roaster overcomes all these difficulties — the coffee is roasted by means of HEATED AIR, the flame never coming in contact with the ' holder (in which the bean is put), and to which J (by the combination of a horizontal and vertical) an universal motion is given, which, is so ' complete and effective, that is is impossible to find one bean a shade either more or less roasted than another. The Patent Coffee Roast r is Perfect. G. & M. can only invite their numerous friends to make a trial of their coffee, which will be frcsli roasted and ground daily, and which they do not hazard to say will be proj nounced the best and only really good they have ever drank.
