RISSOLES WITH PEAS

Mince up any leftover pieces of meat and mix either with crumbled-up bread or with flour; add some peas which have been boiled and allowed to get cold. Mix the ingredients well, binding them together with the yolk of as many eggs as are needed with the amount of the mixture. Form lhe mixture into round cakes, paint each one with egg yolk and dip in breadcrumbs. Fry on both sides until they are golden brown. This dish can be made for vegetarians, without meat. Serve with tomato sauce.
