A Macaroni Dish

For this dish you will need Jib. macaroni, loz. butter, two teaspoons chopped parsley, the yolks of 2 fresh eggs, 1 gill of cream or milk, salt and pepper, capers, and fried cube potatoes.

Break macaroni into convenient lengths and cook till tender in plenty of fast-boiling, salted water (about ? of an hour). Drain well.

Melt'butter in a saucepan, put in macaroni, parsley, salt and pepper. Beat up the yolks, add the cream (or milk) to eggs and pour over macaroni. Stir well till ail is very hot, but do not boil or it will curdle.

Pile on a hot dish, and garnish with lines of capers and little heaps of fried potatoes which have been cut in small dice before frying.
