Take 1 cup of washed sago, and cook in water until thick and clear. Now add 2 tablespoons golden syrup, 1 teaspoon lemon essence, 1 teas’toon tartaric acid, and a pinch of salt. Beat well and pour into a mould. lake the whites of 2 eggs and beat stiffly, adding a little sugar as you whip. Dot over the sago in teaspoonsful. This is usually eaten cold, lint is equally nice if put in a moderate oven until meringue sets. —Mrs. C.S.P., Wanganui.
