Mustard Sauce.
Take loz. butter, loz. flour, 1 tablespoonful’ vinegar, 1 gill fish stock, 2 teaspoonfuls mustard, salt''and pepper to taste, 1 gill milk. Melt the butter and add the flour and mustard. Mix well and add the milk and stock gradually. Stir till it boils, and season to taste. Boil, for three min utes and add the vinegar and season.
