ley and slice of lemon. Pour in water. Cover and place in a moderate oven. Cook slowly'till tender, in about two hours. Season to taste when halfcooked. Stir in egg yolk after diluting it with a little of the stock just before serving. Enough for four or five persons. Veal Stuffed With Orange. Wanted, boned and trimmed fillet of veal. Instead of stuffing it with the usual mixture, roll it round two large, firm, peeled oranges, from which all the white pith has been removed. Cook in the ordinary way and carve .right through orange and meat together. Casserole of Veal Kidneys. Two oz. peeled mushrooms (tinned ones may be used). 1 rasher bacon, 1 gill stock, or water, salt to taste, 1 veal kidney, J tablespoon flour. I small onion, iloz. butter. Wash, dry, skin and thinly slice kidliey. Melt half the butter in a frying pan. Fry kidney, remove and fry onion Place both in a ca’sserole. Melt remainder of butter in another saucepan. Stir in flour and, when frothy, stir In stock. Bring to boil. Add salt to taste and boil up. Turn into the casserole. Sprinkle with the rasher and 2oz. peeled mushrooms, all finely minced. Cover witli buttered paper, then with the lid. Simmer for 30 minutes in the oven. Serve with mashed potatoes and any green vegetable in season. Enough for two persons, nisli with parsley.
