, When You Are Ouc-of-Sorts : JF housewives only realised the important part that food plays in sickness, more trouble would be taken with invalid diet. There is always a time in a case of illness when good feeding is more necessary than medicine. Let us give you some hints on catering for invalids: —- (1) Follow doctor’s orders. If told to give a liquid diet, see that it is a liquid diet. If a light diet is advised, be sure you know exactly what a light diet is before you plan the menus. (2) Season sparingly. (3) Fill cups of liquid only threequarters full. (4) Remove tray as soon as meal is finished. (5) Never ask a patient what he or she wants; arrange surprises. (0) When liquid diet is prescribed, ring the changes between beef tea, beef and chicken bouillon, and chicken and mutton broth. When a long drink is wanted, ring the changes between barley water, lemon whey, and milk drinks. Strain fruit juices. (7) When a light diet is prescribed, ' vary the menu between chicken and meat jelly; fish souffle, lightly boiled, poached, steamed, or scrambled eggs and savoury custard. Follow with simple milk puddings, junket, jelly, apples. Barley Water. Juice and rind of one large lemon, sugar to taste,- 1 dessertspoon barley, 11 pints cold water. Pare lemon and place rind in a saucepan with the water and about one tablespoon sugar. Bring to the boil. Boil gently for 10 to 15 minutes. Mix barley to a paste with a little cold water, and add to mixture. Boil gently for another five minutes. Cool, strain and serve flavoured with lemon juice. { Egg Flip. One egg, 4 pint milk, 1 dessertspoon sugar, 2 teaspoons brandy, if liked. Separate yolk from the white of egg. Beat up yolk with the sugar and stir in brandy. Bring milk to the boil, then add to mixture. Stir well. Beat white lightly and add. Serve hot. Oatmeal Gruel. One tablespoon oatmeal, 1 tablespoons cold water, 2 gills water, sugar, salt. Soak the oatmeal in four tablespoons water for 10 minutes. Turn two gills water into the lop of a double boiler containing boiling water below.- When boiling, pour in the moistened oatmeal and stir well. Cover and boil for 30 minutes. Serve hot in a cup, strained or unstrained as required. ! Invalid Soup. . Half pound neck of mutton, jib, veal bones or knuckle, 41b. shin of beef, 2 small teaspoons salt, r pint cold water. Wipe meat with a damp cloth. Cut into, small pieces and place in a basin. Add water and salt and stand for half an hour. Turn into a saucepan Bring slowly to the boil. Cover and simmer for three hours, skimming frequently. Strain and carefully remove all grease' with the aid <j£ a thin slice of bread. Servo hot ox cold, vylfli /bin., dry. toast,
