TO PICKLE BLACK PLUMS

Ingredients: ljlb. black plums, l|lb. moist sugar, 1 pint best vinegar, ioz. mace, Joz. allspice, }oz. cinnamon. The fruit must be quite dry when gathered. ' Prick each plum several times with a needle. Boil vinegar, sugar and spice together for 10 minutes. Pour over prepared fruit and set aside for 24 hours. Pour off the vinegar and boil for another 10 minutes. Pour on the fruit again and leave- till next day. ' On the third day boil all together very gently for five minutes. Put into jars and tie down with air-tight lids or corks. This will keep for some time.
