To-day’s Recipe CHOCOLATE CREAM PIE

Quarter of a'pound sifted flour, 3 eggs, 1-5 oz. salt butter, 1-J gills milk, 2oz. chocolate, 9oz. caster sugar, vanilla to taste, pinch of salt, 2 tablespoons dried crumbs, 2 to 3 tablespoons cold water. Make shortcrust by rubbing butter into flour and mixing to a dough with cold water. Line pie plate. Prick. Bake. Place chocolate, milk, salt and crumbs in top of a double boiler. Cook over boiling water till smooth. Beat yolks of eggs and caster sugar together. Stir in hot mixture. Return to boiler. Cook, stirring constantly, 1 minute. Remove. Chill. Stir in vanilla. Fold in stiff frothed egg whites. Pour into cool pastry case. When required, cover witli layer of slightly whipped, sweetened and flavoured cream.
