DATE MOULD Dates are a valuable winter feed, possessing, in common with other dried fruits, a high calorie value. A mould can be made by preparing them in the following way:—Stone and lightly chop a pound of dates, stew them in a little water with the grated rind and juice of a lemon. Put an ounce of powdered gelatine into a stewpan with three-quarters of a pint of water, and stir until the gelatine has melted. Add a wineglassful of claret and the juice from the stewed dates, Boil and then add the dates, pour into a well-wetted ehlna mould, and when turned out serve with cream.
