COFFEE NOUGAT Coffee nougat is a delicious sweet which needs no cooking, and is very easily made. It takes ooz. of icing sugar, lib. of ground almonds, loz. castor sugar, and a little strong coffee essence. Mix the icing sugar and ground almonds well together. and bind them into a stiff paste with the coffee essence. Turn the paste on to a sugared pastry board, and knead it well for a few minutes. Cut into pieces and roll into balls, the size of large marbles. Roll each ball in castor sugar until it is well covered, and set aside to harden.
