Left-over vegetatles are seldom considered suitable for offering to honoured guests; but with a little ingenuity they can be used to make tasty fillings for supper sandwiches. Finely chopped. peas, beans or pumpkin, for example, make excellent fillings if a little mayonnaise is added. Mashed potato, or mashed sweet potato, with salt, icd pepper, butter and crushed nuts, made into a paste, also supplies a piquant filling for the supper sandwich. A limp lettuce can be made crisp and fresh if soaked in cold water for a couple of hours. Half a teaspoon of sugar should be added to the water. Radishes have a little-known use. Cooked and served with a little white sauce, they make a. delicious vegetable. The unpleasant odour associated with cooking cabbage can, be eliminated by putting a piece of stale bread into the water in which the cabbage is being boiled.
