Milk-grading Tests
Sir, —With the amount of criticism that has been levelled at the quality of our cheese, one would think that all concerned would be prepared to concede much to bring about the necessary improvement, but it appears that a civil war is raging within the industry. The question involved is so contentious that if all the scientists were locked in a room until they could unanimously agree upon one of the three tests in question as the national universal test they would be there for life, perhaps to the advantage of the industry if personal differences are going to defeat the great objective—quality improvement.—l am, etc., . ■ „ R.D.
