Q.E.D. TESTED RECIPE

(By M.F.C.) LEMON MERINGUE PIE.

Eight ounces sugar, 14oz. cornflour, 1 pinch of salt, juice of rind of 1 lemon, 3 eggs, J pint cold water, 4oz. butter. Prepare a pastry case. Prepare the lemon mixture as follows:—Blend the cornflour with a little water from the half pint, then add the rest of the water and the grated lemon rind and juice. Stir, simmer for 8 minutes or until clear. Cool and then add the salt, Goz. sugar, and the beaten yolks of eggs. Cook over a very gentle heat. Add the butter while mixture is still hot. Pour into pastry case, beat the whites of eggs stiffly with remaining sugar and pile on top of pie. Bake very slowly until slightly brown. This is' a very delicious recipe if stirred with Q.E.D. cream.—P.B.A.
