An Expert’s Advice IMPROVEMENT SUGGESTED Dominion Special Service. Carterton, March 20. The Wairarapa P. and A. Society at its monthly meeting received a report from Professor Drummond on twelve crates ot cheese shipped to London per the Tainui. The crates reported on were halt ot the cheese exhibited at the last show at Carterton in October. The remainder was kept ,in store at Wellington, and judged about the same time as the judging took place in London.. In his report Professor Drummond said there was nothing of outstanding merit to be found in any of the cheese examined. However, with the exception of some five single cheese, the whole might be described as cheese of useful quality, and such as would meet a ready sale on the British market. A number of the lots showed a toughness in texture and want of richness in quality, possibly the result of a hurried process of manufacture. He recommended a longer period between drawing the whey and salting the curd. The colour in both white and coloured cheese was not above criticism, the uncoloured being too creamy or straw-col-loured in shade to please the London trade. Longer cheddaring of the curd before salting, observed the professor, would result in a whiter shade of colour and richer texture. Most of the coloured lots were dull in shade, while others had a bleached appearance. The latter fault usually developed with over-acidity in the curd resulting in a cheese tigh and short in texture. The appearance and finish of the cheese, states Professor Drummond, was on the whole satisfactory. In a few cases the bandage had been left, considerably longer than the depth of the cheese, the result being untidy ends. Following are the awards for the cheese which was judged at London on January 18: — Coloured: Dalefield, 1; Carrington, 2; Pahiatua, 3; Longarth, 4; Greytown. 5; Rongo, 6 ; Premier, 7; Parkvale, 8 ; Elmdale, 9 : Belvedere, 10 ; Pirinoa, 11: Oroua Downs. 12. White: Greytown, 1; Carrington, 2; Parkvale, 3; Longarth. 4: Rongo, 6; Dalefield, 7; Pahiatua. 8; Belvedere, 9; Elmdale, 10; Pirinoa, 11; Oroua Downs. 12. The Wellington awards are as follow: Coloured: Longarth,,93} points; Belvedere, 92} points; Dalefield, Pahiatua, Greytown, Elmdale, 92 .points; Parkvale, Carrington, 91} points; Pirinoa, Rongo. Premier, 91 points; Oroua Downs, 90 points. White: Longarth, Belvedere. 93 points; Dalefield. 92 points: Pahiatua, ■Greytown. Elmdale. Parkvale. Carrington. Pirinoa. ,91} points; Rongo, 91 points; Premier, Oroua Downs. 90} points.
