FAULTS IN CHEESE
Carelessness in Finishing INSPECTOR’S OPINIONS Dominion Special Service. Dunedin, May 1. Mr. A. C. Ross, who recently returned after serving over four years as an inspector of New Zealand produce ' in London, in an address said he was strongly of opinion that our cheese was packed far too green, and as a result lackeJ. juice and character.' There were complaints about carelessness in finishing cheeses, and tight packing caused serious defects. Cheese in the past had been spoilt by too heavy salting.
