A new method of butter manufacture is being tried in Holland and is meeting with success in delaying the deterioration of butter, says tho “Scientific American.” The process consists in churning in an atmosphere of pure carbon dioxide. The air is sucked out of the churn and is replaced by carbon dioxide, which fills the process of the butter and keeps out the oxyo’cii so long as tlio butter is not vig~ orously agitated after exposure to tho air. Tho natural process of deterioration is accelerated by oxygen. The cost of the process is said to be negligible in. view of the advantages gained.
The total population of Alaska, with an area of 590,884, square miles, is less than that of a town like Barrow-in-Furness, England.
