COMMUNAL KITCHENS IN LONDON
PRACTICAL DEMONSTRATIONS li\ T •' FOOD ECONOMY. Particulars of an interesting experiment in food supply resulting: from war conditions, being put into operation in London, iiave been sent to the New Nouth "Wales Government by the A KentGeneral. The Food Controller of Great 'Britain lias decided to establish a public supply of cook'ed food,'both hot and cold, as nearly as possiblq. at_ cost price, in order to'meet the needs of small houseliolds, and to economise domestic fuel ,iud labour. It is announced that, the first "communal food supply" will probably be established in London, south of flio Thames, as a centre for other depots throughout South London which may provide cooked meals for 100,000 persons. The organisation of the kitchens will'bo :arriod through bv the women directors it the Ministry of Food. The directors explain that the kitchens are not to be •stablished because of the poverty of the people, but because they will prevent waste, and so conserve food. It has also been announced to Captain Bathurst that it is intended to establish In Central London a model kitchen. \rhore practical demonstrations in food Soonouiy will be given. The women di-
rectors at tho Ministry of Food explain that much economy in food will result from the establishment of theso kitchens, as waste is occasioned not only by the throwing away of things which could be used, but by cooking food so badly that the full benefit is not derived from it. It is anticipated that the municipal outhorities and other bodies will take up tho idea, and develop it to suit the requirements of their own localities.
