TO-DAY'S DINNER.
(Specially written for Tnz Dominion,J TUESDAY. Rico sou]). Scotch collops. Potatoes. Turnips. Cup pudding. | . SCOTCH! COLLOI'S. One pound steak, one small onion, one dessertspoonful flour, three-quarter pint water, one ounce butler or clarified ([ripping, pepper and salt, parsley. Cut the meat into thin even slices, three inches square, l'ccl the onion and chop it fineiv. .Melt I lie butter, and when quite hot put in tho meat and fry until brown. Lift out tho meat and put in the onion and flour, and fry for a few minutes. Then add the water gradually and stir over the ftio until it thickens ami boils, iicturn the meat to the pan, and simmer very slowly for one hour. Add salt owl pepper to taste. Serve 011 a hot dish and sprinkle very finely-minced parslev over it. FOR TO-MORROW. Three pints white stock, Tabbits, bacon, macaroni, cheese, apples, pastry.
