TO-DAY'S DINNER.
[Specially written for The Domihion.l MOXDAY. Boiled leg of mutton. Caper sauce. Potatoes. Carrots. Turnips. Spanish cream. Stewed fruit. SPANISH CREAM. One pint nnd a half of milk, three eggs, three-quarter ounce gelatine, half a tcacupful of sugar, flavouring. Soak the gelatine in about a cup of the milk, put the rest of the milk on to boil; when boiling, stir in the eggs, well beaten with the sugar, and stir until it boil?; add the flavouring, vanilla if liked, nnd pour on to the stiffly-beaton whites of the eggs. Pour into a. wet mould, and when set turn out. The custard must boil or it will not separate. The top of tho pudding should bo clear amber, and t!ie custard below, forming two distinct layers. It should only just boil; do not keep it cooking.
FOR TO-MORROW. Tiro pounds fillet of steak, two dozen oysters, tomatoes, ground ginger, suet, treacle.
